Spiced sago

Ingredients:
Servings: 2 people
1 cup sago/tapioca pearls
1 tbsp oil (or ghee)
1/2 tsp cumin seeds
1/2 tsp mustard seeds
1/2 cup roasted peanuts (blitz into coarse powder)
1-2 green Chilli finely chopped (adjust to your spice preference)
1/2-inch ginger finely chopped
1 spring curry leaves
1 tbsp lemon juice
salt to taste
fresh coriander leaves to garnish
Method:
Rinse the sago pearls 2-3 times until the water runs clear.
Soak them in just enough water to cover for 4-6 hours or overnight. Drain any excess water before cooking.
Heat oil or ghee over medium heat, add cumin and mustard. Let them splutter.
Add curry leaves, ginger and chilli. Sauté for few seconds until fragrant
Add in the soaked sago, salt and turmeric, toss gently until well combined.
Cook on low heat, stirring occasionally, until the sago turns translucent.
Mix in the ground peanut powder and toss well.
Squeeze in the lemon juice and garnish it with coriander and server hot.
