Spiced Sago


Ingredients:


Servings: 2 people


  • 1 cup sago/tapioca pearls

  • 1 tbsp oil (or ghee)

  • 1/2 tsp cumin seeds

  • 1/2 tsp mustard seeds

  • 1/2 cup roasted peanuts (blitz into coarse powder)

  • 1-2 green Chilli finely chopped (adjust to your spice preference)

  • 1/2-inch ginger finely chopped

  • 1 spring curry leaves

  • 1 tbsp lemon juice

  • salt to taste

  • fresh coriander leaves to garnish


Method:


  • Rinse the sago pearls 2-3 times until the water runs clear.

  • Soak them in just enough water to cover for 4-6 hours or overnight. Drain any excess water before cooking.

  • Heat oil or ghee over medium heat, add cumin and mustard. Let them splutter.

  • Add curry leaves, ginger and chilli. Sauté for few seconds until fragrant

  • Add in the soaked sago, salt and turmeric, toss gently until well combined.

  • Cook on low heat, stirring occasionally, until the sago turns translucent.

  • Mix in the ground peanut powder and toss well.

  • Squeeze in the lemon juice and garnish it with coriander and server hot.
