Ginger Garlic Fish Stir-Fry

This is my absolute go-to stir-fry recipe, especially after a long, tiring day at work. It’s quick, easy to make, and incredibly delicious!.

Ginger Garlic Fish stir fry

Ingredients:


Servings : 2 people


  • 500g basa fillets(or white fish of your choice) cut into bite sized pieces.

  • 2 tablespoons cornflour (cornstarch)

  • 2 tablespoons light soy sauce

  • 1 -2 bird's eye chilli

  • 1 tablespoon oyster sauce

  • 2 teaspoons minced garlic

  • 1 tablespoon minced ginger

  • 3 spring onions, white parts finely sliced (reserve green parts for garnish)

  • Salt and pepper, to taste

  • 2 tablespoons sesame oil


Method:


  • Pat the fish pieces dry and season it with salt pepper and cornflour.

  • Heat 1 tablespoon of sesame oil in a pan over medium heat and sear the fish until lightly golden, remove and set aside

  • In the same pan, add the remaining oil and stir-fry minced garlic, ginger, chilli, white parts of the spring onion for 1-2 minutes until fragrant.

  • Add the soy sauce and oyster sauce to the pan. Stir well to combine.

  • Add the fish to the pan and gently toss to coat it in the sauce. Let it cook for 1- 2 min to allow the flavours to meld.

  • Garnish it with green parts of the spring onion

  • Serve it with jasmine rice or on its own.
