Ginger Garlic Fish Stir-Fry

This is my absolute go-to stir-fry recipe, especially after a long, tiring day at work. It’s quick, easy to make, and incredibly delicious!.

Ingredients:
Servings : 2 people
500g basa fillets(or white fish of your choice) cut into bite sized pieces.
2 tablespoons cornflour (cornstarch)
2 tablespoons light soy sauce
1 -2 bird's eye chilli
1 tablespoon oyster sauce
2 teaspoons minced garlic
1 tablespoon minced ginger
3 spring onions, white parts finely sliced (reserve green parts for garnish)
Salt and pepper, to taste
2 tablespoons sesame oil
Method:
Pat the fish pieces dry and season it with salt pepper and cornflour.
Heat 1 tablespoon of sesame oil in a pan over medium heat and sear the fish until lightly golden, remove and set aside
In the same pan, add the remaining oil and stir-fry minced garlic, ginger, chilli, white parts of the spring onion for 1-2 minutes until fragrant.
Add the soy sauce and oyster sauce to the pan. Stir well to combine.
Add the fish to the pan and gently toss to coat it in the sauce. Let it cook for 1- 2 min to allow the flavours to meld.
Garnish it with green parts of the spring onion
Serve it with jasmine rice or on its own.
